Avocado Toast

What’s not to love about avocado toast in the morning? With all the protein needed to get the day started, this recipe is quite simple to make and tastes delicious. Trevor and I don’t eat bread very often, but when we do, this is a go-to meal. We actually have this more often without bread by simply putting the avocado on top of presunto, Portugal’s smoked ham.

Pairing sriracha sauce with presunto along with paprika in the avocado makes for a sweet and smokey bite with a kick. The perfect egg is the star of the show when you spread the yolk around to enjoy in every bite.

How to make a perfect sunny side up egg requires low heat and a lid. Make sure the pan is up to temperature before cracking the eggs. The butter adds flavor and helps the eggs slide out easier. Sometimes I use unsalted butter or ghee and they all taste great, so it’s a matter of preference.

Ingredients
• 1 avocado
• 1 tsp fresh lemon juice
• 2 slices of ham
• 2 large eggs
• 1/2 tsp paprika
• 2 slices of toast
• 1 Tbsp of chopped scallions
• 2 tsp sriracha sauce
• 1 Tbsp butter
• Salt and pepper to taste

Directions
• Mash avocado with lemon juice. Add paprika, salt and pepper. Mix well.
• Heat large skillet on medium heat with 1 tsp butter. Add ham slices.
• Heat 2 tsp butter in small skillet over medium low heat. Add eggs, salt and pepper to taste. Cover with lid and cook until whites are cooked.
• Plate toast, if using, and/or ham and cover with avocado. Add egg on top and sprinkle with scallions and siracha sauce.
